Are you looking for vegan options in Minnesota? Look no further! Brittney and Gerard Klass, the entrepreneurial couple behind Soul Bowl, have crafted a vegan-friendly menu that includes cauliflower and chicken wings with a selection of vegan sauces, vegan nachos, cheese fries, fried rice with root vegetables, kale and roasted peanuts, quinoa with black beans and grilled vegetables, blueberry muffins with apple puree and an apple and blueberry crunch, and a variety of pantry items such as granola, sauces, jams and a vinaigrette that changes with the seasons. At Jen and Kate Lloyd's bakery, you can find cleverly prepared chewy bagels that are naturally vegan. The bakery also offers a long list of vegan candies and spreads (natural cashew cream with onion and garlic, plus vegan butter) and plant-based proteins. Start your meal with miso-shiitake mushroom broth or soup of the day, then enjoy well-fortified brown rice bowls, roasted sweet potato and black bean burritos, salads, smoothies, and hot and cold beverages prepared with cashew milk and dates.
The vegetables they use are grown by local farmers and, while they offer some dairy and protein options, most of the dishes are served with protein substitutes from Herbivorous Butcher, a plant-based meat and cheese store. Vegan East is packed with vegan options. The hamburger section alone includes fourteen vegetarian-friendly burgers. Enjoy Beyond burgers with vegan bacon on a pretzel bun filled with white cheddar cheese or homemade vegan burgers topped with jalapeños and cayenne and lime mayonnaise.
This return to the All-American restaurant also shows its vegan side with whole-grain pancakes, full fries and tofu scrambled eggs. The bar program pays homage to Francis's location in northeast Minneapolis. Herbivorous Butcher is a great place to stock up on vegan food in the pantry. But it also offers hot specialties at the store such as red miso ribs made with a base of tofu and jackfruit or hot chili cheese sausages made with seitan.
At Reverie Cafe and Bar in Powderhorn neighborhood you can find monthly specialties such as jackfruit bulgogi tacos filled with coleslaw, garlic aioli, pickled red radish or coconut achiote with coconut rice.
